I know we've done songs but have we done albums? For me it would Springsteen's Born To Run, U2's Unforgettable Fire, King's X Gretchen and many others.

WAY too many to even mention, I could probably come up with thousands if I had the time to think about it (which I don't).
Here's a good suggestion, go to the "Custom Chart" page on Rate Your Music, select the "include all genres except" and type in "Metal". That will give you a list of the top albums selected by their users excluding metal.

To me, it's all metal. It just depends on what 'shade' of metal it is.

Seeing as how nobody's answered the original topic extensively, here's my response. Some good stuff to start out with if you're new to the specific sound.
There's way too much prog-rock to recommend, so I'll leave it at Close to the Edge by Yes, Selling England by the Pound by Genesis, and In the Court of the Crimson King by King Crimson
As for jazz, go for Black Saint and the Sinner Lady by Charles Mingus, as well as Blue Train by Coltrane and A Tribute to Jack Johnson by Miles Davis.
In a genre all their own, any Steely Dan album from 1972-1980 is well worth your time.
If you like folk with a country edge, give Townes Van Zandt's Our Mother the Mountain or his S/T a listen.
Krautrock is another non-metal genre that I don't see thrown around here much, if any at all. Go for Can's Tago Mago, Neu!'s self-titled 1972 debut, Popol Vuh's In den Gärten Pharaos, Ashra Tempel's S/T, and Ashra's New Age of Earth.
A couple essential jazz-fusion albums to check out: Mahavishnu Orchestra's The Inner Mounting Flame, Billy Cobham's Spectrum, Alphonse Mouzon's Mind Transplant, The New Tony Williams Lifetime's Believe It, and Herbie Hancock's Headhunter.
Some good post-rock stuff to look into: Slint's Spiderland, Swans' Soundtracks for the Blind, Tortoise's Millions Now Living Will Never Die, A Silver Mt. Zion's He Has Left Us Alone but Shafts of Light Sometimes Grace the Corner of Our Rooms..., any Godspeed You! Black Emperor album, and Russian Circles' Enter.
Ulver's Shadow of the Sun is a great dark-ambient album worth checking out. (It contains an awesome cover of Sabbath's "Solitude")
I'm not huge into punk, but I'd recommend Black Flag's Damaged, Minor Threat's self-titled comp, Hüsker Dü's Zen Arcade, and Bad Brains' The Youth are Getting Restless.
I'm not 100% sure on where to categorize these guys (maybe avant-garde or experimental rock?), but Kayo Dot is a great band. Check out Choirs of the Eye & Dowsing Anemone with Copper Tongue.

I don't know why any of the albums mentioned would be must haves though.
I think to have something that covers all tastes in music you'd have to look at classic albums that penetrated the market. Let's say the Beatles' White Album or Michael Jackson's Thriller or maybe Dark Side of the Moon or Bat Out of Hell.
Those are actually kind of must have's regardless of your musical tastes.

I was going at it more from a metal fan's point of view (ie. one that doesn't really care what's mainstream); but that's a good point.

It's an age thing I suppose ?
All the albums I listed have very distinctive aspects and varied content in the styles of music. Aside from the Gypsy album, each is "iconic" for the time they were released and have left a pretty decent legacy. Not only from the standpoint of each band. but in the history of music as well.
I'd add all the albums that Jimi Hendrix Experience recorded as well as Band of Gypsys. Of course, it is all opinion.

Fleetwood Mac--Rumours Jethro Tull--Aqualung Genesis--Foxtrot Husker Du--New Day Rising (probably Zen Arcade better qualifies, but I don't like it as much) Joy Division--Closer The Cure--Disintegration
All my other favorite non-metal albums are just "must-haves" for me.

I think that any list really is subjective, be it Jazz, Punk, Indie, Prog or whatever. That being said, here is some of my favorite non-metal albums.

For me one of the essential albums everyone should have is Bob Marley's Survival. Even if you don't like reggae. When Time named Marley's Exodus as the greatest album of all time they completely got the wrong album IMHO.
