I could list a host of Rush, Yes, and ELP instrumentals here but they're not quite "metal..."
The Overture to 2112 definitely deserves recognition, though.

F' it - I listened to this concert tune - as a sweet lil kid - about 1,000 times ! I could actually play the beginning of it - quickly after I bought my first electric guitar and amp !

I'm really surprised nobody has mentioned this one: Woodpecker from Mars off of Faith No More's "The Real Thing." As a kid, this track blew my mind and it still does. It sonically captures how bizarre the cover art is, which is kind of lost in the digital age. Those crazy, iconic images aren't cropping up as much on album art, much less music that SOUNDS like the art looks.
Not as high on my list, but their cover of the theme from Midnight Cowboy on "Angel Dust" was also pretty sweet, even if it feels a bit like a hangover after a really nuts party.

This brings me back. Had the LP. ( My first concert, by the way ) I was just a teen - summer - thinking, in my room, that this song was great ! It still has that joy and proudness about it

These guys ( Boston band ) played down the hallway from my friend's band - It was huge news when they got signed - bands were happy for them - and it got everyone excited that another band might get picked up - It was like an injection of power - for everyone - even crowds were happy for them - They were quite different from EXTREME - lol

I recently bought this Stormwitch CD in early October - I really love the 1984 production / sound that it obviously has - Anvil's "March Crabs" has that great Marshall Stack sound too *

Witch Cross put out a box set and a new album last year on Hells Headbangers Records. The box set is called All That's Fit For Fighting and it has the Fit For Fight album and a load of bonus tracks and a DVD. Their new album is called Axe To Grind and it has a different lead singer but is a high quality album that sounds very much like Saxon.

I was reading thru this thread and wanted to add one of my favorites, but someone beat me too it. Woodpecker from Mars is such a cool song. I hated that album w h enough I first got it, but two tracks stood out to me at the time, Woodpecker, and surprise you're dead. I like the whole album much more now than I did then, but those two are still my favorites.
Here is a rely good instrumental song that hasn't been mentioned as of yet though little number by Death Angel called, The Ultra-Violence.

I'm not a big Trivium fan, but I thought 'The Crusade' was an awesome instrumental. For a "newer" metal band, this has a real old-school vibe to it.
