Some of my favs:
Carcass - Heartwork (melodic death metal before it was trendy, but BRUTAL)
Bolt Thrower - anything up to "IVth Crusade" really
Napalm Death - Fear, Emptiness, Despair (the album title really epitomizes the sound of the disc, cold and distant, very stark & haunting)
Mortification - Scrolls of the Megilloth (brutal & heavy for it's time, still crushing today!)
Paramaecium - Exhumed of the Earth (ultra-heavy doom/death metal)
Pestilence - anything really, though their later tech-death album "Spheres" is my favorite
Crimson Thorn - Unearthed (BRUTAL!)
I also didn't see a mention of Gorguts, unless I missed it. That's another early band that you probably won't want to miss out on.
Oh, and you probably already know about Suffocation, but pretty much all death metal fans I know consider their early stuff to be essential. Plus, the guy who did the artwork for their first EP is a friend

I think Scrolls isn't all that it's said to be. Post Momentary Affliction completely blows it away if you ask me.

Of these, I'm really liking the Sinister a lot so far...I have never heard them before and this is really good stuff. They're all good, and like the Black Metal bands I tried out, they're all fairly different from each other.

Indeed, but then again, Post Momentary isn't a pure death metal album, whereas Scrolls is 100% death metal.

SINISTER is one of my absolute favorites. I especially like their more recent stuff. Like MONSTROSITY, they are criminally underrated.

I had SotM back when it came out new...I remember being surprised by how good I thought it was. Rowe's vocals were huge and Jayson Sherlock was amazing to me. I was a fan of the band from s/t thru PMA & the live album....then I lost interest. I may have to revisit SotM in my travels...

Some essential death metal IMHO (I actually have the entire discography of each band listed here).
Mortification - Scrolls Suffocation - first 3 albums Malevolent Creation - first 2 Bolt Thrower - any album from the second release onwards Gorguts (1st two are more traditional sounding) Cannibal Corpse - The Bleeding Death - first 4 albums. Obituary - Slowly We Rot, Cause of Death, End Complete. Napalm Death - Harmony Corruption
