Paranoid by Sabbath has always been one of my favorites. Oh and Wicked World, too.
There's a solo in Powerslave that always f*cking demolishes me.
Some of my favorite solos are in Dogs by Pink Floyd.
Limelight by Rush is up there too (but Alex Lifeson played a ton of my other favorites, too).
Lucretia by Megadeth.

All the solos are great. I recall, the first time I heard the speed run on Don't Talk to Stranger. I had to rewind my cassette tape about five times to believe it.

This song has the greatest solo ever written. Surprised it hasn't been brought up yet.
This one is also great. Right around the 5 minute mark is when it starts I think.
Plus just about every solo mentioned above are all great.
