Five Leaves Left is primarily like that aside from a couple songs with strings. You should try and find the collection "Time Of No Reply" which is mostly demos with just guitar/vocals.

I'm really enjoying this one. Lots of seemingly disparate elements (from prog to glam to symphonic to "core-ish") all thrown into the pot yet somehow it gels into melodic and memorable songs. And I haven't even begun to try to figure out the storyline to this concept album.
